    Warm liquids and bloom yeast

    Heat the milk until it’s warm but not hot (about 100–110°F / 38–43°C). Combine the warm water and milk in a bowl. Stir in the granulated sugar and sprinkle the instant yeast over the top. Let sit 5–8 minutes until foamy.

    Combine dry ingredients

    In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook, whisk together the all-purpose flour and salt.

    Add wet ingredients

    Add the foamy milk-yeast mixture to the flour along with the softened unsalted butter (cut into pieces) and one egg. Begin mixing on low speed until the dough starts to come together. If using a mixer, mix 4–6 minutes on medium-low until a smooth, slightly tacky dough forms. If mixing by hand, stir with a wooden spoon then turn onto a lightly floured surface and knead 8–10 minutes.

    Adjust for hydration and finish knead

    If dough feels too dry, add up to 1–2 tablespoons of warm water; if too sticky, add up to 2 tablespoons flour. Knead until the dough is elastic and passes a gentle windowpane test (stretch a small piece thinly without tearing).

    First rise

    Lightly oil a large bowl with vegetable oil. Place the dough in the bowl, turning once so it’s coated in oil. Cover with plastic wrap or a clean kitchen towel and let rise in a warm draft-free spot until doubled in size, about 60–90 minutes depending on room temperature.

    Shape buns

    Punch down the dough gently to release gases. Turn onto a lightly floured surface and divide into 12 equal pieces (each about 70–80 g). Shape each piece into a tight round bun by tucking edges under and rotating on the counter to create surface tension. Place buns on a baking sheet lined with parchment, leaving 1.5–2 inches between each for expansion.

    Second rise

    Cover the shaped buns loosely with lightly oiled plastic wrap or a clean towel and let proof until puffy and nearly doubled, about 45–60 minutes.

Topping / Finish

    Prepare egg wash

    Beat the remaining egg with 1 teaspoon water to make an egg wash. Gently brush the tops of the proofed buns with the egg wash, taking care not to deflate them.

    Add seeds (optional) and bake

    If using, sprinkle sesame seeds evenly over the brushed buns. Preheat the oven to 375°F (190°C). Place the baking sheet on the middle rack and bake 15–18 minutes or until buns are golden brown on top and register 190°F (88°C) internally.

    Finish and cool

    Remove buns from the oven. If you prefer a softer, shinier finish, brush the hot buns with melted butter. Transfer to a wire rack and cool at least 15 minutes before slicing or serving.
