Method

Cocktail

  1. 1

    Chill and prepare glassware

Place four highball or hurricane glasses in the freezer for 5–10 minutes, or fill them with ice water while you prepare the cocktails to chill.

  2. 2

    Combine ingredients

In a large cocktail shaker or pitcher, add 0.75 cups light rum (per 4 servings equivalent: total 1.5 cups listed for batch), 0.375 cups blue curaçao (per 4 servings: total 0.75 cups), 1.25 cups pineapple juice (per 4 servings: total 2.5 cups), 0.125 cups fresh lemon juice (per 4 servings: total 0.25 cups), and 0.125 cups simple syrup (per 4 servings: total 0.25 cups). Add 3 cups of ice to the shaker or fill the pitcher with crushed ice. Note: quantities in this description explain per-serving split; use the batch amounts from the ingredients list for four servings.

  3. 3

    Shake or stir

If using a shaker: Shake vigorously for 10–15 seconds until the outside of the shaker frosts. If using a pitcher: Stir briskly for 15–20 seconds to thoroughly chill and dilute the mixture.

  4. 4

    Strain and serve

Discard ice from chilled glasses if you used ice water. Fill each glass with fresh ice. Strain the cocktail equally into four prepared glasses. The drink will have a bright blue color from blue curaçao.

Garnish & Finish

  1. 5

Garnish each glass with a pineapple wedge and a maraschino cherry on a cocktail pick, and add a small paper umbrella. Serve immediately with a straw.
