    Make the roux

    In a heavy-bottomed Dutch oven or large pot set over medium-low heat, combine 1 cup vegetable oil and 1 cup all-purpose flour. Stir constantly with a wooden spoon or heatproof spatula, scraping the bottom and sides, until the roux turns a deep peanut-butter to milk-chocolate color. This will take 20–30 minutes. Reduce heat slightly if it starts to smoke. Maintain steady stirring to avoid burning.

    When the roux reaches the desired color, immediately stir in the diced onion, green bell pepper and diced celery (the 'holy trinity'). Cook, stirring frequently, until the vegetables soften and the roux sizzles again, about 6–8 minutes. Add the minced garlic and cook 1 minute more until fragrant.

Stock & Seasoning

    Stir in 2 tablespoons tomato paste to deglaze and add depth. Slowly whisk in 6 cups seafood (or fish or chicken) stock a cup at a time, ensuring the roux incorporates smoothly without lumps.

    Add 2 bay leaves, 2 teaspoons Creole seasoning, 1 teaspoon dried thyme, 1 teaspoon Worcestershire sauce, 1 teaspoon hot sauce, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon Old Bay (optional), and 1/4 teaspoon cayenne. Bring the gumbo to a gentle simmer over medium heat.

    Reduce heat to low and let simmer, uncovered, stirring occasionally for 30 minutes to develop flavor. Taste and adjust seasoning (salt, hot sauce, cayenne) as desired. Remove bay leaves before serving.

Seafood

    If using frozen seafood, ensure shrimp and crawfish are thawed and patted dry. Add the crawfish tails and shrimp to the simmering gumbo and cook until shrimp are pink and just firm, about 3–5 minutes depending on size.

    Gently stir in the oysters with their liquor and simmer 2–3 minutes more — oysters should just begin to curl at the edges but remain tender. Add the lump crab meat last, folding gently to warm through for 1–2 minutes; avoid over-stirring to keep crab lumps intact.

    Taste and adjust final seasonings. If you’d like a slightly thicker finish and a hint of traditional flavor, stir in 1 teaspoon file powder off heat (do not boil after adding).

Finish & Serve

    Spoon cooked white rice into bowls (about 1 cup rice per serving) and ladle the hot seafood gumbo over the rice.

    Garnish with chopped fresh parsley and sliced green onions. Serve immediately with lemon wedges on the side and additional hot sauce if desired.
