Method
Cocktail
- 1
Prepare glass
Chill a large hurricane glass or other tall glass by filling it with ice and set aside while you mix the drink.
- 2
Combine ingredients
In a cocktail shaker, add the light rum (2 oz), dark rum (1 oz), fresh lime juice (0.5 oz), fresh lemon juice (0.5 oz), passion fruit syrup or puree (1 oz), orange juice (1 oz), simple syrup or grenadine (0.5 oz), and 2 dashes of Angostura bitters. Add 4 ice cubes to the shaker.
- 3
Shake
Shake vigorously for about 10–15 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.
- 4
- 5
Strain
Strain the shaken cocktail into the prepared glass over the crushed ice, allowing the liquid to cascade over the ice for a frothy top.
- 6
Float overproof rum (optional)
Carefully pour 0.25 oz overproof rum (151) over the back of a spoon to float it on top of the drink. This step is optional; omit if you prefer a lower-proof cocktail.
- 7
Finish & garnish
Add 2 more dashes of Angostura bitters across the top if desired for aroma. Garnish with an orange wheel and a maraschino cherry on a pick.
- 8
Serve
Serve immediately with a straw. Advise guests to stir the float in if they want a more uniform drink; otherwise sip through the layers.
