Chill glass
Place the old-fashioned glass in the freezer for a few minutes or fill it with ice water to chill while you prepare the cocktail.

Measure bitters and syrup
In a mixing glass, add 3 dashes of Peychaud's bitters, 1 dash Angostura bitters (optional), and 1/4 teaspoon simple syrup.

Add whiskey
Pour 2 oz rye whiskey into the mixing glass with the bitters and simple syrup.

Prepare glass & garnish

Rinse glass with absinthe
Discard the ice water from the chilled old-fashioned glass (if used). Measure about 1/4 teaspoon absinthe into the glass. Swirl and roll the absinthe around the interior so it coats the sides, then discard any excess (either pour out or carefully pour into a waste container), leaving only the light aromatic coating.

Strain cocktail
Using a strainer, pour the stirred whiskey mixture from the mixing glass into the absinthe-rinsed old-fashioned glass over a single large ice cube or a few smaller cubes, depending on preference.
