    Preheat oven to 450°F (230°C). Arrange oysters on a rimmed baking sheet or in an oyster pan so they sit level. If using a metal rack, place a small mound of rock salt on the sheet and nestle oysters into it to keep them steady.

    Season each oyster lightly with a pinch of sea salt and a small grind of black pepper. Set aside while you prepare the spinach topping and sauce.

Spinach Topping

    Heat a large skillet over medium heat. Add 2 tablespoons butter and 1 tablespoon olive oil. When the butter foams, add the minced shallot and sauté until soft and translucent, about 2–3 minutes.

    Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

    Add the packed baby spinach in batches, stirring to wilt between additions. Cook until all spinach is wilted and any liquid released has reduced, about 3–4 minutes total.

    Transfer the wilted spinach to a fine-mesh sieve or colander and press with the back of a spoon to remove excess moisture. Return spinach to the skillet or a bowl and finely chop if large pieces remain.

    Stir in the chopped parsley, lemon juice, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch (about 1/8 teaspoon) of freshly grated nutmeg. Taste and adjust seasoning. Keep warm but off direct heat until assembling.

Sauce (Light Roca-style Mornay-ish)

    In a small saucepan over medium-low heat, melt 2 tablespoons butter. Whisk in 2 tablespoons flour and cook 1–2 minutes to form a blond roux; do not let it brown.

    Gradually whisk in the warmed milk, a little at a time, to avoid lumps. Bring to a gentle simmer while whisking until the sauce thickens and coats the back of a spoon, about 3–4 minutes.

    Remove from heat and whisk in 1/2 cup grated Parmesan, 1/2 teaspoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, and 1/4 teaspoon hot sauce if using. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Taste and adjust — the sauce should be creamy, slightly tangy and savory but not overpowering.

    If the sauce is thicker than desired for spooning over oysters, thin with 1–2 teaspoons warm milk until a spoonable consistency is reached. Keep warm.

Finish & Bake

    Combine the toasted panko and 1 teaspoon melted butter in a small bowl. Toss until crumbs are evenly coated.

    Spoon a generous teaspoon (or more to taste) of the warm sauce onto each oyster, then top with about 1 to 1.5 tablespoons of the spinach mixture, mounding it slightly so the oysters feel spinach-forward (in keeping with the "deep shell/less sauce, more spinach" note).

    Lightly sprinkle the panko mixture over each oyster, then shave or dust a little additional grated Pecorino/Parmesan on top (about 1/4 teaspoon each).

    Place the baking sheet in the preheated 450°F oven and bake for 8–10 minutes, or until the topping is bubbly and the panko is golden. Rotate sheet once for even browning. Alternatively, place under a hot broiler on high for 2–3 minutes watching closely so crumbs do not burn.

    Remove oysters from oven. Let rest 1–2 minutes. Garnish with chopped chives or microgreens and serve immediately with lemon wedges.
