Rinse and drain
Place shucked oysters in a fine-mesh strainer and gently rinse with cold water to remove any grit. Let drain for 10–15 minutes on paper towels; pat dry very gently so they retain some brine but are not dripping.

Marinate
Combine cold buttermilk and hot sauce (if using) in a shallow bowl. Add oysters and gently stir to coat. Cover and refrigerate for 20–30 minutes — this tenderizes and helps the breading adhere.

Mix dry ingredients
In a wide, shallow bowl or rimmed tray, whisk together flour, cornstarch, cornmeal (if using), baking powder, kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne until evenly combined.

Dredge oysters
Set up a dredging station: flour mixture in one dish and egg wash in another. Working in small batches (4–6 oysters), remove oysters from buttermilk, letting excess drip back into the bowl, then dredge each oyster in the flour mixture, press lightly to coat, dip into the egg wash, then return to the flour mixture for a final coat. Place breaded oysters on a wire rack set over a baking sheet. For extra-crispy coating, you can double-dredge: egg wash and flour a second time. Let sit 10–15 minutes to set the crust before frying.

Heat oil
Pour oil into a heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (roughly 3–4 cups depending on vessel). Heat over medium-high to reach 350°F (175°C). If you don’t have a thermometer, test with a small pinch of flour — it should sizzle immediately but not burn.

Fry in batches
Carefully lower 4–6 breaded oysters into the hot oil using a slotted spoon or spider, taking care not to overcrowd. Fry until golden brown and crisp, about 2–3 minutes total, turning once so both sides color evenly. Internal texture should still be tender; avoid overcooking which causes toughness.

Drain and keep warm
Transfer fried oysters to a wire rack set over a sheet pan or paper towels to drain excess oil. Keep warm in a single layer in a 200°F (95°C) oven while you finish remaining batches.
