Prepare the Beans
In a small pot, heat the pinto beans over medium heat until warmed through. Season with salt and pepper to taste.

Cook the Hash Browns
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the hash browns and cook until crispy, about 5-7 minutes, flipping halfway through. Season with salt and pepper.

Fry the Eggs
In another skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Garnish and Serve
Garnish with fresh cilantro and serve with an additional tortilla on the side.
