Mousse Preparation

Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave, stirring until smooth. Let it cool slightly.

Whip the Cream

In a large bowl, whip the heavy cream until soft peaks form. Set aside.

Separate the Eggs

Separate the egg yolks from the whites. In a medium bowl, whisk the egg yolks with the sugar, cinnamon, and vanilla extract until creamy.

Combine Chocolate and Egg Yolks

Slowly mix the melted chocolate into the egg yolk mixture until well combined.

Beat Egg Whites

In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture.

Gently fold the whipped cream into the chocolate mixture until fully incorporated. Be careful not to deflate the mixture.

Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours to set.
