Boil the Corn
In a large pot, bring water to a boil. Add the corn on the cob and boil for about 7-10 minutes, or until tender. Remove from water and let cool slightly.

Prepare the Topping
In a bowl, mix the mayonnaise, lime juice, and a pinch of salt until combined.

Assemble the Elote
Once the corn has cooled down, brush each ear with the mayonnaise mixture. Roll the corn in crumbled cotija cheese until well coated.

Season the Elote
Sprinkle chili powder over the corn to taste. Optionally, add more lime juice and salt if desired.

Serve
Serve the elote immediately while warm, garnished with additional cheese and lime wedges if desired.
