Method
Base Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C) so it’s hot and ready for baking.
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
Combine Wet Ingredients
In another bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until smooth.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Prepare for Baking
Grease a 9-inch round cake pan or line it with parchment paper. Pour the batter into the prepared pan.
Bake
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool the Base
Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Strawberry Topping Preparation
Prepare Strawberries
While the cake is cooling, wash and hull the fresh strawberries. Slice them into halves or quarters depending on your preference.
Mix Topping Ingredients
In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries with the sugar and juice.
Let it Sit
Allow the strawberry mixture to sit for about 10-15 minutes. This will help the strawberries release their juices and create a syrup.
Top the Cake
Once the cake has cooled, spoon the strawberry topping over the cake, spreading it evenly.
