In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
Frying the Potatoes
Carefully add the dried potato wedges to the hot oil in batches. Fry them for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.
Draining the Fries
Once cooked, remove the fries using a slotted spoon and drain them on paper towels. Sprinkle with salt immediately while they're still hot.
