Burger Patty

    Prepare the Patty

    In a mixing bowl, combine 1 lb of ground beef with 1 tsp of salt and 1 tsp of black pepper. Mix well and divide the mixture into two equal portions, shaping each into a ⅓ lb patty.

    Cook the Patty

    Preheat a grill or skillet over medium-high heat. Cook each patty for about 4-5 minutes on one side, then flip and place 2 slices of Pepper Jack cheese on each patty. Cook for an additional 3-4 minutes until the cheese is melted and the patty reaches your desired doneness.

Ghost Chili Sauce

    Prepare the Sauce

    In a blender, combine 2 whole ghost chili peppers, 2 cloves of garlic, 2 tbsp of olive oil, and 1 tbsp of lime juice. Blend until smooth. Adjust seasoning to taste.

    Prepare the Toppings

    Slice the habanero and jalapeño peppers thinly. Set aside for assembly.

Chipotle Mayonnaise

    Make the Chipotle Mayonnaise

    In a bowl, mix 1 cup of mayonnaise, 1 tsp of chipotle powder, and 1 tbsp of lime juice. Stir until well combined.

Burger Assembly

    Assemble the Burger

    Toast the burger buns lightly on the grill or in a toaster. Spread a generous amount of chipotle mayonnaise on the bottom bun, place the cooked patty with melted cheese on top, add the sliced habaneros and jalapeños, and drizzle with ghost chili sauce. Top with the other half of the bun and serve immediately.
