Chipotle Mayo Preparation

Prepare the Chipotle Mayo
In a small bowl, combine the mayonnaise, chipotle peppers in adobo sauce, and lime juice. Mix well until fully blended. Set aside in the refrigerator until ready to use.

Roast the Poblano and Red Peppers
Preheat your oven to 425°F (220°C). Place the poblano and red bell peppers on a baking sheet and roast in the oven for about 20-25 minutes, turning occasionally, until the skins are blistered and charred. Remove from the oven and place in a bowl covered with plastic wrap for about 10 minutes to steam. Once cooled, peel off the skins and slice the peppers into strips.

Prepare the Burger Patties
In a large bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined. Form into 4 equal patties.

Assemble the Burger
Toast the hamburger buns if desired. Spread a generous amount of the chipotle mayo on the bottom bun. Place the cooked burger patty with melted cheese on top, followed by roasted poblano and red pepper strips. Top with the other half of the bun and serve.
