Huckleberry Hatch Chili BBQ Sauce

Method

BBQ Sauce Preparation

    Make the BBQ Sauce

    In a medium saucepan, combine huckleberry jam, hatch chili powder, apple cider vinegar, brown sugar, garlic powder, onion powder, salt, and black pepper.

    Simmer

    Bring the mixture to a simmer over medium heat, stirring occasionally, until the sauce thickens slightly, about 10 minutes. Remove from heat and set aside.

Roasted Red Pepper Mayo Preparation

    Make the Roasted Red Pepper Mayo

    In a blender or food processor, combine mayonnaise, roasted red peppers, lemon juice, minced garlic, and salt. Blend until smooth and creamy.

Burger Assembly

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy, about 8-10 minutes. Remove and drain on paper towels.

    Shape and Cook the Patties

    Form the ground beef into 4 equal-sized patties. Season each side with salt and black pepper. In the same skillet, cook the patties over medium-high heat for about 4-5 minutes per side for medium doneness.

    Add Goat Cheese

    In the last minute of cooking, place a slice of goat cheese on each patty and cover the skillet to melt the cheese.

    Toast the Buns

    While the patties are finishing, toast the burger buns in a separate skillet or toaster until golden brown.

    Assemble the Burger

    Spread a generous layer of roasted red pepper mayo on the bottom half of each toasted bun. Place the patty with melted goat cheese on top, add 2 slices of bacon, a handful of arugula, and a spoonful of huckleberry hatch chili BBQ sauce. Top with the other half of the bun.
