Veggie Patty Preparation

    Cook Quinoa

    Rinse the quinoa under cold water. In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside to cool.

    Prepare Veggie Mixture

    In a large mixing bowl, mash the black beans with a fork until mostly smooth. Add the cooked quinoa, diced bell pepper, chopped onion, minced garlic, cumin, paprika, salt, black pepper, and the egg. Mix until well combined.

    Form Patties

    Add the bread crumbs to the veggie mixture and stir until the mixture holds together. Divide and shape the mixture into 2 patties.

    Cook Patties

    Heat a non-stick skillet over medium heat. Add a splash of oil if desired. Cook the patties for about 5-6 minutes on each side, or until they are browned and heated through.

Burger Assembly

    Toast Buns

    Lightly toast the burger buns in the same skillet for 1-2 minutes until golden brown.

    Assemble Burger

    Spread mayonnaise on the bottom half of each bun. Place a cooked veggie patty on top, followed by a slice of cheese, lettuce, tomato slices, and onion slices. Top with the other half of the bun.
