Melt the Chocolate
Break the dark chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and melt the chocolate, stirring occasionally until smooth.

Once melted, remove the bowl from heat and stir in the coconut milk, maple syrup, and vanilla extract until fully combined and smooth.

In a small saucepan, bring the fresh mint leaves and a little water to a simmer over medium heat. Let it simmer for about 5 minutes to infuse the mint flavor. Strain the mixture and set aside to cool.

Once the mint infusion has cooled, add it to the chocolate mixture along with the peppermint extract. Mix well until fully incorporated.
