Method

Preparation

  1. 1

    Prepare Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onions, celery, and minced garlic. Sauté until the onions are translucent, about 5 minutes.

  2. 2

    Add Potatoes and Broth

Stir in the diced potatoes and add the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.

Cooking

  1. 3

    Incorporate Clams

Add the chopped clams to the pot along with the dried thyme and bay leaf. Stir to combine and let simmer for an additional 10 minutes.

  2. 4

    Add Cream and Season

Pour in the heavy cream and season with salt and black pepper to taste. Stir well and allow the chowder to heat through for another 5 minutes.

Serving

  1. 5

    Serve Hot

Remove the bay leaf from the chowder. Serve hot in bowls, and enjoy your Grandpa's Clam Chowder!
