Soak the Potato Sticks
Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps achieve a crispy texture.

First Fry
Heat the vegetable oil in a deep fryer or a large pot to 325°F (163°C). Drain the soaked potato sticks and pat them dry with paper towels. Carefully add a handful of potato sticks to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes until they are soft but not browned. Remove them with a slotted spoon and drain on paper towels.

Cool the Fries
Allow the fries to cool for at least 15 minutes. This step is crucial for achieving a crispy texture in the final fry.

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the cooled potato sticks again in batches for 2-3 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
