Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Fry the Potatoes
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the cut fries to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Cook the Beef
In a large pot over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Remaining Ingredients
Add the canned diced tomatoes, kidney beans, chili powder, ground cumin, salt, and black pepper. Stir to combine.

Simmer the Chili
Bring the chili to a simmer, then reduce the heat to low and let it cook for about 20-30 minutes, stirring occasionally.

Assemble the Chili Cheese Fries
On a serving platter, place a generous portion of the crispy fries. Pour the hot chili over the fries, then sprinkle the shredded cheddar cheese on top. Serve immediately.
