Preparing the Fries

Start by washing the Russet potatoes under cold water to remove any dirt. Pat them dry with a kitchen towel.

Using a sharp knife, cut the potatoes into even-sized sticks, about 1/4 inch thick for uniform cooking.

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make them crispier.

After soaking, drain the fries and pat them dry thoroughly with a clean towel.
Making Cajun Seasoning

Mixing the Spices
In a small bowl, combine the paprika, garlic powder, onion powder, dried oregano, dried thyme, black pepper, cayenne pepper, and salt. Mix well until all spices are thoroughly combined.
Frying the Fries

In a large, deep skillet or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pan. Fry them for about 5-7 minutes until they are golden brown and crispy.

Use a slotted spoon to remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Immediately sprinkle the hot fries with the Cajun seasoning while they are still hot. Toss them gently to ensure they are evenly coated.
