Calamari Preparation

Prepare the Calamari
Thaw the calamari if frozen and pat dry with paper towels. This will help achieve a crispier texture.

Mix Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari
Dredge the calamari rings first in the flour mixture, then dip them in the beaten eggs, and finally coat them with breadcrumbs.
Frying

Heat the Oil
In a large skillet or deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes until golden brown, turning occasionally.

Drain the Calamari
Use a slotted spoon to remove the calamari from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, and add oregano, salt, and black pepper. Stir to combine.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish with Basil
Stir in the fresh basil just before serving.

Plate the fried calamari and serve hot with the marinara sauce on the side for dipping.
