Method

Preparing the Fish

  1. 1

    Marinating the Fish

In a bowl, combine olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper. Add the fish fillets to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.

  2. 2

    Grilling the Fish

Preheat your grill to medium-high heat. Grill the marinated fish fillets for about 3-4 minutes on each side, or until they are cooked through and flaky. Remove from grill and let rest for a few minutes before flaking the fish into bite-sized pieces.

Making the Cabbage Slaw

  1. 3

    Mixing the Slaw

In a large bowl, combine the shredded cabbage, grated carrot, sliced red onion, and chopped cilantro. Drizzle with lime juice and sprinkle with salt. Toss everything together until well mixed. Set aside to let the flavors meld.

Preparing the Chipotle Mayo

  1. 4

    Making the Chipotle Mayo

In a bowl, mix together mayonnaise, minced chipotle in adobo, lime juice, and salt. Stir until smooth and well combined. Adjust seasoning with additional salt if desired.

Assembling the Tacos

  1. 5

    Assembling

Warm the corn tortillas on the grill or in a skillet. To assemble, place a few pieces of grilled fish on each tortilla, top with cabbage slaw, and drizzle with chipotle mayo. Serve immediately.
