Preparing the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thick fries, about 1/2 inch wide.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Heat the Oil
In a large frying pan or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with a paper towel. Carefully place them in the hot oil in batches, frying for about 5-7 minutes or until golden brown. Remove and drain on paper towels. Sprinkle with salt.

Make the Batter
In a bowl, mix together 1 cup of all-purpose flour, 1 tsp baking powder, 1 tsp salt, and 0.5 tsp black pepper. Gradually whisk in 1 cup of cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil for Frying
In a separate frying pan or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Coat the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil, a few pieces at a time. Fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.
Serving

Plate the Dish
Serve the hot fish and fries together on a plate. Optionally, you can add lemon wedges and tartar sauce on the side.
