    Prepare the Lamb

    Preheat the grill to medium-high heat. Rub the lamb porterhouses with olive oil, salt, and black pepper. Let them sit at room temperature for about 20 minutes before grilling.

    Grill the Lamb

    Place the lamb porterhouses on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let rest for 10 minutes.

    Make the Mashed Potatoes

    Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt to taste.

    Sauté the Seasonal Vegetables

    In a skillet, sauté the seasonal vegetables in olive oil over medium heat until tender, about 5-7 minutes. Season with salt and pepper.

    Prepare the Red Wine Balsamic Reduction

    In a saucepan, combine red wine, balsamic vinegar, and honey. Bring to a boil and then reduce heat to simmer until the mixture reduces by half and thickens slightly, about 15 minutes.

    On each plate, serve the mashed potatoes as a base, top with grilled lamb porterhouses, and arrange seasonal vegetables alongside. Drizzle with tomato chutney and the red wine balsamic reduction.
