Burger Preparation

Prepare the Burger Patties
In a large bowl, combine the ground Black Angus chuck and ground brisket. Season the mixture with salt and black pepper. Gently mix until combined and form into 4 equal patties.

Preheat the Grill
Preheat your grill or grill pan over medium-high heat.

Cook the Patties
Place the burger patties on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

Add Cheese (Optional)
If using cheese, add a slice of Cheddar or Gruyere on top of each patty during the last minute of cooking. Close the grill lid to melt the cheese.

Prepare the Buns
While the burgers are cooking, toast the burger buns on the grill until golden brown.

Assemble the Burgers
On the bottom half of each toasted bun, place a leaf of lettuce, a slice of tomato, a burger patty, onion slices, pickles, and bacon (if using). Top with the other half of the bun.

Serve with Fries
Serve the burgers hot with hand-cut fries on the side.
