    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced Poblano peppers, and minced garlic. Sauté until the onion is translucent, about 5-7 minutes.

    Brown the Prime Rib

    Add the chopped prime rib to the pot and cook until browned on all sides, about 5-10 minutes.

    Add Remaining Ingredients

    Stir in the tomato paste, diced tomatoes, black beans, beef broth, cumin, chili powder, salt, and black pepper. Mix well to combine.

    Simmer

    Bring the chili to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Garnish and Serve

    Taste and adjust seasoning if necessary. Serve hot, garnished with chopped cilantro.
