    Prepare the Onions

    Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.

    Make the Batter

    In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until you have a smooth batter.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Onion Rings

    Dip the onion rings into the batter, allowing any excess to drip off.

    Fry the Onion Rings

    Carefully place the battered onion rings into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per side.

    Drain and Serve

    Remove the fried onion rings with a slotted spoon and drain on paper towels. Serve hot with smoked Chile catsup on the side.
