Prepare the Chicken
Cut the whole chicken in half along the backbone. Place the chicken halves in a large bowl and cover with buttermilk. Allow to marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Coating
In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Dredge the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each half in the flour mixture until fully coated. Shake off excess flour.

Heat the Oil
In a large, deep skillet or frying pan, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Chicken
Carefully place the chicken halves in the hot oil, skin side down. Fry for about 10-12 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Drain and Serve
Remove the chicken from the oil and drain on paper towels. Serve hot with chicken gravy and your choice of two side dishes.
