Chop the Tasso ham, Shiitake mushrooms, and Poblano peppers. Mince the garlic cloves.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped Tasso ham and sauté for 3-4 minutes until slightly crispy. Add the minced garlic, Shiitake mushrooms, and Poblano peppers. Cook for an additional 5-6 minutes until the vegetables are tender.

Stir in the Cajun seasoning, heavy cream, and vegetable broth. Bring to a simmer and cook for 10 minutes until the sauce thickens slightly.

Plate the Cajun Creole sauce with the Tasso ham and vegetables, top with the grilled shrimp, and serve with your choice of side.
