Prepare the Steak
Season the NY Strip steaks generously with coarse black pepper and salt on both sides.

Cook the Steak
In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the seasoned steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest on a plate.

Make the Sauce
In the same skillet, add the remaining tablespoon of butter and the finely chopped shallots. Sauté for 1-2 minutes until the shallots are translucent.

Deglaze the Skillet
Carefully pour in the brandy to deglaze the skillet, scraping up any browned bits. Allow the brandy to reduce for about 2-3 minutes.

Finish the Sauce
Stir in the heavy cream and green peppercorns. Let it simmer for another 3-4 minutes until the sauce thickens slightly. Season with salt to taste.

Slice the steaks and serve them topped with the green peppercorn brandy sauce.
