Prepare Espresso

Brew Espresso
Brew 1 cup of strong espresso and allow it to cool to room temperature.
Make Mascarpone Mixture

Combine Egg Yolks and Sugar
In a mixing bowl, whisk together 3 egg yolks and 100 grams of granulated sugar until the mixture is pale and thick.

Fold in Mascarpone
Add 500 grams of mascarpone cheese to the egg mixture and gently fold until fully combined.

Whip Heavy Cream
In a separate bowl, whip 1 cup of heavy cream until stiff peaks form.

Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until smooth and creamy. Add 1 teaspoon of vanilla extract and mix gently.
Assemble Tiramisu

Dip Ladyfingers
Quickly dip each ladyfinger cookie into the cooled espresso, ensuring they are soaked but not soggy.

Layer Ingredients
In a 9x9 inch dish, create a layer of soaked ladyfingers, followed by half of the mascarpone mixture. Repeat with another layer of ladyfingers and the remaining mascarpone mixture.
Chill and Serve

Chill Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

Before serving, dust the top with 2 tablespoons of cocoa powder and sprinkle dark chocolate shavings on top.
