Method

Prepare the Lobster

    Boil the Lobster

    Bring a large pot of salted water to a boil. Add the whole lobsters and cook for 8-10 minutes until they turn bright red. Remove the lobsters and let them cool.

    Extract the Meat

    Once the lobsters are cool enough to handle, crack the shells and remove the meat. Chop the lobster meat into bite-sized pieces and set aside.

Cook the Pasta

    Cook the Linguine

    In the same pot of boiling water, add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Make the Sauce

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Wine and Cream

    Pour in the white wine and bring to a simmer. Let it reduce by half, then stir in the heavy cream, salt, and black pepper. Cook for an additional 3-4 minutes.

    Incorporate Lobster and Pasta

    Add the chopped lobster meat and cooked linguine to the skillet. Toss everything together, adding reserved pasta water as needed to achieve the desired consistency.

    Garnish

    Remove from heat, sprinkle with fresh parsley, and serve immediately.
