Method

Prepare the Octopus

    Clean the Octopus

    Rinse the octopus under cold water and remove the beak and innards if not already done. Pat dry with paper towels.

    Marinate

    In a bowl, combine olive oil, minced garlic, the juice of half the lemon, salt, and black pepper. Add the cleaned octopus to the marinade, ensuring it's well coated. Let it marinate for at least 30 minutes.

Grill the Octopus

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill

    Remove the octopus from the marinade and place it on the grill. Grill for about 3-4 minutes on each side until charred and cooked through, about 15-20 minutes total.

    Rest

    Remove from the grill and let the octopus rest for 5 minutes before slicing.

Make the Citrus Vinaigrette

    Combine Ingredients

    In a small bowl, whisk together orange juice, white wine vinegar, honey, salt, black pepper, and olive oil until emulsified.

Assemble the Salad

    Prepare the Salad

    In a large bowl, combine arugula and halved cherry tomatoes. Drizzle with the citrus vinaigrette and toss gently to combine.

    Serve

    Slice the grilled octopus and arrange it over the arugula salad. Crumble feta cheese on top and serve immediately.
