Rinse the cleaned calamari under cold water and pat dry with paper towels. This helps to remove excess moisture, ensuring a crispy texture when fried.

In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all ingredients are evenly distributed.

Heat the Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Coat the Calamari
Dip each calamari ring into the egg wash, allowing excess to drip off. Then dredge in the flour mixture, ensuring each piece is well-coated.

Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making the Spicy Aioli

In a small bowl, combine the mayonnaise, Sriracha sauce, lemon juice, minced garlic, and salt. Whisk together until smooth and well-blended.

Adjust Seasoning
Taste the aioli and adjust the seasoning as needed, adding more Sriracha for spice or lemon juice for tang.
