Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt the Chocolate and Butter

In a medium saucepan over low heat, combine the chopped semi-sweet chocolate and the unsalted butter. Stir continuously until melted and smooth. Remove from heat and let cool slightly.

Mixing

  1. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

  2. 4

    Whisk Eggs and Vanilla

In a large mixing bowl, whisk together the eggs and vanilla extract until light and frothy.

  3. 5

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, whisking until fully incorporated. Then, gently fold in the dry ingredients until just combined.

Baking

  1. 6

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 8

    Prepare for Serving

Remove the ramekins from the oven and let them sit for 1 minute. Carefully run a knife around the edges of each cake to loosen.

  2. 9

    Invert and Serve

Invert each ramekin onto a plate and gently tap to release the cake. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
