Melt chocolate and butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave, stirring until smooth and well combined. Let it cool slightly.

Mix sugar and eggs
In a separate bowl, whisk together the granulated sugar and eggs until the mixture becomes pale and slightly thickened.

Combine mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from cooking.

Add dry ingredients
Fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Do not overmix.

Fill ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Cool briefly
Remove from the oven and let the fondants cool in the ramekins for about 1-2 minutes.

Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
