Preparation

1

Prepare the Potatoes

Wash the baby potatoes thoroughly under cold running water. Cut any larger potatoes in half to ensure even cooking.

2

Chop the Vegetables

Dice the red bell pepper, green bell pepper, and red onion into small pieces. Mince the garlic cloves.

Cooking

3

Boil the Potatoes

In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 10-15 minutes until fork-tender. Drain and set aside.

4

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced red and green bell peppers, red onion, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

5

Combine and Season

Add the boiled potatoes to the skillet with the sautéed vegetables. Sprinkle with paprika, salt, black pepper, dried oregano, and dried thyme. Gently stir to combine and cook for an additional 5 minutes to allow flavors to meld.

Serving

6

Finish and Serve

Remove the skillet from heat. Garnish with chopped fresh parsley and grated Parmesan cheese. Serve warm as a delicious brunch side dish.
