    Make the Spicy Creole Mayo

    In a bowl, mix together 1 cup mayonnaise, 1 tablespoon Cajun seasoning, and 1 tablespoon hot sauce. Set aside.

    Prepare the Seafood

    In a bowl, season the shrimp and catfish with salt and pepper. Dredge shrimp in flour and catfish in cornmeal.

    Fry the Seafood

    Heat oil in a deep frying pan. Fry shrimp for about 3-4 minutes or until golden brown. Fry catfish for about 4-5 minutes or until golden and cooked through.

    Slice the po'boy rolls in half. Spread a generous amount of spicy creole mayo on both sides. Layer with lettuce, tomato, pickles, and the fried seafood of your choice.
