Prepare the Brûléed Pineapple
Sprinkle granulated sugar evenly over the pineapple slice. Use a kitchen torch to caramelize the sugar until it forms a golden crust. Set aside.

Muddle the Pineapple
In a mixing glass, add the fresh pineapple pieces and muddle gently to release the juice.

Combine Ingredients
Add the Four Roses Bourbon, Crude Tropi-500 Bitters, Angostura Bitters, and pineapple simple syrup to the muddled pineapple in the mixing glass.

Mix the Cocktail
Fill the mixing glass with ice and stir well until chilled.

Strain and Serve
Strain the mixture into an old-fashioned glass filled with ice.
