    Prepare the Ingredients

    Chop the onion, bell pepper, celery, and garlic. Cut the chicken and sausage into bite-sized pieces.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes.

    Add Chicken

    Add the chicken pieces to the pot and cook until no longer pink, about 5-7 minutes.

    Sauté Vegetables

    Stir in the onion, bell pepper, celery, and garlic. Sauté for 3-4 minutes until the vegetables are tender.

    Add Tomatoes and Seasonings

    Mix in the canned diced tomatoes, chicken broth, rice, paprika, cayenne pepper, thyme, bay leaves, salt, and black pepper.

    Cook the Rice

    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the rice is cooked.

    Add Shrimp

    Stir in the shrimp and cook for an additional 5 minutes, until the shrimp are pink and cooked through.

    Serve

    Remove the bay leaves and garnish with chopped green onions before serving.
