Prepare the Coleslaw
In a large bowl, combine the shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, and salt. Mix well and refrigerate for at least 30 minutes.

Prepare the Potatoes for Fries
Peel and cut the potatoes into thick strips. Soak them in cold water for 30 minutes, then drain and pat dry.

Prepare the Seafood Breading
In a bowl, mix flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

Fry the Seafood
Dip the catfish, oysters, and shrimp in the egg mixture, then dredge in the flour mixture. Fry in hot oil until golden brown, about 3-4 minutes for shrimp and oysters, and 5-6 minutes for catfish. Drain on paper towels.

Arrange the fried seafood, hand-cut fries, and coleslaw on a large platter. Serve hot with your favorite dipping sauce.
