Method

Preparation

  1. 1

    Prepare the Coleslaw

In a large bowl, combine the shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, and salt. Mix well and refrigerate for at least 30 minutes.

  2. 2

    Prepare the Potatoes for Fries

Peel and cut the potatoes into thick strips. Soak them in cold water for 30 minutes, then drain and pat dry.

Frying

  1. 3

    Fry the Potatoes

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

  2. 4

    Prepare the Seafood Breading

In a bowl, mix flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

  3. 5

    Fry the Seafood

Dip the catfish, oysters, and shrimp in the egg mixture, then dredge in the flour mixture. Fry in hot oil until golden brown, about 3-4 minutes for shrimp and oysters, and 5-6 minutes for catfish. Drain on paper towels.

Serving

  1. 6

    Serve the Platter

Arrange the fried seafood, hand-cut fries, and coleslaw on a large platter. Serve hot with your favorite dipping sauce.
