Prepare the Breading
In a shallow dish, combine flour, cornmeal, salt, and black pepper. In another bowl, whisk together eggs and milk.

Bread the Oysters
Dip each oyster into the egg mixture, allowing excess to drip off, then coat in the flour mixture.

Fry the Oysters
In a deep skillet or fryer, heat oil to 350°F (175°C). Fry oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Mix the Coleslaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour dressing over the cabbage mixture and toss to combine.
