Prepare the Tomatoes
Slice the green tomatoes into 1/2-inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with black pepper and cayenne pepper.

Bread the Tomatoes
Dredge each tomato slice in flour, shaking off excess, then dip in the egg, and finally coat with panko breadcrumbs.

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the Tomatoes
Carefully place breaded tomato slices in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Cajun Remoulade

Mix Ingredients
In a bowl, combine mayonnaise, Dijon mustard, Cajun seasoning, hot sauce, minced garlic, and lemon juice. Mix well until smooth.

Serve the fried green tomatoes hot with the Cajun remoulade on the side.
