Marinate the Alligator
In a bowl, soak the alligator meat in buttermilk for at least 1 hour. This tenderizes the meat and adds flavor.

Prepare the Breading
In a separate bowl, mix cornmeal, flour, Cajun seasoning, salt, and black pepper.
Frying

Heat the Oil
In a deep skillet or fryer, heat the oil to 350°F (175°C).

Bread the Alligator
Remove the alligator from the buttermilk and shake off excess. Dredge the meat in the cornmeal mixture until fully coated.

Carefully place the breaded alligator pieces in the hot oil. Fry for 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
