    Make the Roux

    In a large heavy pot, melt the butter over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a deep brown color, about 15-20 minutes.

    Sauté the Vegetables

    Add the chopped onion, green bell pepper, celery, and garlic to the roux. Cook, stirring frequently, until the vegetables are soft, about 5-7 minutes.

    Add Crawfish or Shrimp

    Stir in the crawfish or shrimp and cook for another 2-3 minutes.

    Add Stock and Seasonings

    Slowly pour in the chicken or seafood stock while stirring. Add thyme, cayenne pepper, salt, and black pepper. Bring to a simmer.

    Simmer

    Reduce the heat to low and let the etouffee simmer for 20-30 minutes, stirring occasionally, until thickened.

    Serve

    Serve the etouffee over a bed of cooked rice and garnish with chopped green onions and parsley.
