Prepare the Rice
Start by cooking the seasoned rice according to the package instructions. Set aside once done.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are soft.

Add Garlic and Spices
Stir in the minced garlic, Cajun seasoning, and bay leaves. Cook for an additional 2 minutes until fragrant.

Combine with Tomatoes and Broth
Add the canned diced tomatoes (with juice) and chicken broth to the skillet. Bring to a simmer.

Remove the bay leaves and serve the crawfish or shrimp creole over the prepared seasoned rice.
