    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Make the Cajun Seasoning

    In a small bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt.

    Heat the Oil

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain and pat the fries dry. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes.

    Season the Fries

    Remove fries from the oil and drain on paper towels. While still hot, sprinkle the Cajun seasoning over the fries and toss to coat.
