Prepare the Filling
In a large skillet over medium heat, add a little oil and sauté the onion, bell pepper, and celery until softened. Add the minced garlic and sauté for an additional minute. Stir in the crab meat, crawfish tails, shredded cabbage, Cajun seasoning, salt, and pepper. Cook for about 5 minutes until everything is well combined and heated through. Allow the mixture to cool.

Assemble the Eggrolls
Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a little water. Repeat with remaining wrappers and filling.

Fry the Eggrolls
Heat the oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the eggrolls hot with a sweet & spicy chili garlic dipping sauce.
