Prepare the Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Add the salt and then gradually mix in the flour until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into smaller pieces. Roll each piece into a rope and cut into bite-sized pieces.

Boil and Bake
In a large pot, bring 10 cups of water to a boil and mix in the baking soda. Boil the pretzel bites in batches for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with coarse sea salt.

Bake the pretzel bites in the preheated oven for about 12-15 minutes or until golden brown. Remove from the oven and let them cool slightly before serving.
